The Clever Dripper. A lesser-known brew method borne from the more traditional pour over method we all know and love, the Clever Dripper allows for a slightly less hands on brew. Apart from the Clever Dripper and the paper filters that come with it, you’ll need all the usual stuff: scales, timer, kettle, server, and a spoon. This recipe uses 28g of medium grind coffee and 420g of water with a 1:15 ratio, but you can alter this recipe to suit you.

Step 1: Plop your filter paper into your Clever Dripper, and wet with boiling water. Decant this into your server to preheat it.

Step 2: Boil the kettle and leave it to cool for a minute. You don’t want your pouring water at boiling temp.

Step 3: Add all of your ground coffee to the Clever Dripper, and give it a gentle tap to evenly distribute it.

Step 4: Place the Clever Dripper on your scales and tare. Start your timer, and fill the Clever Dripper with 420g of hot water. Put the lid on and leave it to brew for 2 min and 30 sec. Fill this time however you see fit.

Step 5: Remove the lid and give it a couple of gentle stirs to break up the ‘crust’.

Step 6: Rest the clever dripper on your empty server and let the coffee drain through. Enjoy!
