Banana Bread Recipe
There are strong Portuguese and Arabic influences in Mozambique cuisine. Mozambique became a Portuguese colony from the early 15th century and remained one, until 1975 when Mozambique declared its independence.
Below is a traditional Portuguese recipe of Banana Cake.
- 2 medium Bananas
- 3 Eggs
- 1 teaspoon of vanilla extract
- 100g of butter at room temperature
- 125g granulated sugar
- 175g of all purpose flour
- 1 tablespoon of honey
- 1 teaspoon baking powder.
Smash the bananas with a fork. Then beat the sugar, butter and the eggs until obtain a smooth and even mixture. Add the smashed banana, honey, vanilla extract and mix for 3 to 4 minutes until all mixed thoroughly . Reduce the mixer speed too low, add the flour and the baking powder and beat until the mixture . Pour the mixture into the prepared tin and bake about 40 minutes. Turn off the oven and unmold the cake. Let cool completely and serve with a hot cup of coffee.
